New Email-Exclusive Recipe
Tomorrow is a big day in our house and we've been talking about it for weeks!
And if you just so happen to be wondering what we're going to be eating for dinner tomorrow it's these Game Day Nutritarian Nachos that I'm about to share with you.
But, first, there's a story behind this recipe. I promise I won't be offended if you want to skip this part and head right on down to the good stuff!
But for those of you who are curious, please read on...
See my husband Kevin and I met in college (21 years ago) at Florida State University in Tallahasse, Florida. Since we're both alums, Saturdays in the fall are dedicated to watching our favorite college football games together.
In the last couple of years our kiddos have started watching games with us too. Although (full transparency) they get extra screen time for watching the game if we win--so it's well-incentivized.
Tomorrow happens to be one of the biggest games of the year for us: Florida State versus University of Miami. Most of my family in Florida are UM fans so this game dictates familial bragging rights for a full year!
The truth is college football is literally the only sport I watch or care about in any way and that's because of all the years of going in person to this particular game with my grandfather and college friends.
Needless to say, I like to make something special for our big rivalry football games and I think it's about time that I shared this game day tradition with all of you too.

Game Day Nutritarian Nachos
SERVES: 4 to 6 people
INGREDIENTS:
- 10 corn tortillas
- 1 cup raw cashews
- 3/4 cup water
- 2 tbsp. lemon or lime juice
- 1 (12-ounce) jar roasted red peppers
- 1/4 cup + 2 tbsp. nutritional yeast
- 2 tsp. onion powder
- 1/4 tsp. garlic powder
- optional: 1 tsp. ground Chipotle powder
- optional topping: 1 can black beans (drained), green onions, fresh radishes, 1/4 cup Extra-Creamy Enchilada Sauce (RC-71 from Week 4 of the prep program) and/or Quick-Pickled Red Onions
INSTRUCTIONS:
Preheat a conventional oven to 350 degrees Fahrenheit or you can use an air fryer (see modifications in notes). Place a piece of parchment paper on a baking sheet. Cut your tortillas into fourths. Arrange in a single layer on the sheet--try not to let them overlap.
Bake fore 30 to 35 minutes, or until just over-all browning. Remove and allow to cool before serving. You will need to bake at least 2 batches.
Towards the end of baking your chips make the cheese sauce. Combine all the ingredients after corn tortillas (and chipotle powder if using) in a high-speed blender. Blend on high for 1 1/2 to 2 minutes, until the sauce is very smooth and creamy and warmed from the high-speed blending. It's okay to see steam build up inside the blender jar.
Reserve the warmed cheese sauce so you can pour it directly over the baked chips once done baking.
AIR FRYER TECHNIQUE FOR CHIPS:
Set the temperature to 350 degrees and select the "air fry" function. Lay the uncooked cut tortillas in your fryer basket in a single layer and cook for 15 minutes. Since air fryer units are each unique it's a good idea to check them at 10 to 12 minutes to make sure they are not over cooking.
HOW DO YOU STORE THE LEFTOVER SAUCE?
Store in the fridge in a glass food container (I love this size Mason jar) in an upper shelf for 9 to 12 days or freeze for up to 2 months. To reheat, bring it to room temperature, then warm it up in a small pot over medium-low heat, using a whisk to reincorporate.You can add a bit of plant milk to help it along if it is too thick or you can cook it down to condense it if it looks watery (especially after frozen).
HOW MUCH CHEESE SAUCE SHOULD YOU USE?
This recipe will yield about 2 3/4 cups cheese sauce and I typically use half of the batch of sauce when I serve these nachos. But how much you use should be based on your current lifestyle goals. If you are following the Aggressive Weight Loss nutritarian plan I recommend the lower-fat cheese sauce I have on my website here or the Extra-Creamy Cheese Sauce (RC-31) recipe from Week1 of the prep program.
WHAT TEXTURE MODIFICATIONS CAN YOU MAKE TO THE CHEESE SAUCE?
You can soak the cashews in water over night for a creamier texture but this is not required. If you do just cover it with cool water and leave it on the counter then rinse and drain before using. For a slightly richer, higher-calorie and creamier sauce, check use the Nacho Cheese Sauce recipe on p.188 of Fridge Love.
WHAT FLAVOR MODIFICATIONS CAN YOU MAKE?
If you're not a fan of red peppers cut the amount down to 1/2 cup drained. Although I will say that I don't find the flavor over-powering as is. If you'd like to use the optional chipotle powder flavoring I like to use lime juice instead of lemon.
